Roger, not only do I know the origin of the name Cholmondley's, but I clearly remember the dog the eating spot was named for. (Pardon the ending preposition, please.) Cholmondley was the name of the dog belonging to the beloved campus photographer Ralph Norman who was, next to Abe Sachar, the most well known person on campus.
